In short, being gluten free is an option for anyone. There are few negative side-effects that occur for those who choose to go gluten free without having an intolerance or sensitivity. One of the side effects of becoming gluten free is that some people can build up an intolerance or sensitivity overtime. After removing gluten from ones diet for several months, eating a bowl of pasta or piece of bread could cause digestive discomfort.

The warning from most doctors and nutritionists is that when people remove entire groups of food from their diet, they might be missing important nutrients and fiber that must be replaced. In todays modern world, those needed nutrients are easily replaced with other foods. The main takeaway from this is that those on a gluten-free diet should make sure to moderate their intake of fiber, vitamins, and nutrients.

One of the main reasons people go gluten free is the perceived idea that it is healthier. While this is true with proper diet and exercise, simply swapping cookies with a gluten-free sweet does not mean its healthy. Gluten-free junk food is still just junk food. Learn More About Gluten

Gluten-free diets are not the fad diet some people make them out to be they are necessary for many people with celiac disease and gluten intolerance or sensitivity.

For people diagnosed with celiac disease, gluten causes inflammation in the small intestine. Eliminating gluten in the diets of those with the disease or those with gluten sensitivity results in a significant reduction in uncomfortable and potentially dangerous symptoms.

A gluten-free diet eliminates the protein gluten, which is found in grains such as wheat, barley and rye. Unless labeled gluten-free or made with corn, rice, soy or other gluten-free grains, those with celiac disease or who are gluten intolerant need to avoid the following:

  • Beer
  • Gravies and sauces, including soy sauce
  • Imitation meat or seafood
  • Seasoned rice mixes and snack foods
  • Soup and soup bases

Be careful of the potential risks of a gluten-free diet. Health experts generally recommend people do not follow this diet unless necessary for digestive health. Cutting out gluten increases the risk of not getting enough vitamins and minerals, such as iron, calcium, thiamin, riboflavin, niacin and folate.

People following a gluten-free diet also may not get enough fiber or be able to take advantage of other benefits of whole grains. Those benefits include reducing the risk of coronary heart disease, cancer, diabetes and obesity. Plus, gluten may boost the bodys immune function.

Labelling Requirements For Enriched Gluten Free Foods

Gluten-free products that have been enriched must be labelled gluten-free. This statement must appear on the principal display panel in close proximity to the common name of the food, e.g., enriched rice bread, gluten-free, or as part of the common name, e.g., gluten-free enriched rice bread. If rice flour were fortified gluten-free enriched rice flour would be an acceptable common name.

All vitamin and mineral nutrient preparations added to a gluten-free products must be identified by their correct common names in the ingredient list, and all of the nutrients must be declared in the nutrition panel as a percentage of the Recommended Daily Intake. Information on acceptable sources of fibre and the claims that can be made for them may be obtained from the Canadian Food Inspection Agency website.

Maintaining a healthy diet is important for all children. For children with celiac disease, there is the added challenge of keeping their food free of gluten. Venus Kalami, a clinical pediatric dietitian with Lucile Packard Childrens Hospital and Stanford Childrens Health shares some information to help you navigate healthy eating for your child with celiac disease.

What is celiac disease?

Gluten is a protein that is found in wheat, barley, rye, andnon-gluten-free oats. It is what makes bread dough stretchy. Gluten is alsowhat gives bread a chewy texture when it is baked.

When people with celiac disease eat gluten, their body has a reaction to that, and it can make them sick. They could get a stomachache or diarrhea. Often, patients dont have symptoms. Even if patients are symptom-free, eating gluten causes inflammation in their intestines that can lead to serious problems if not treated. There is no cure for celiac disease. However, it can be treated by eating a strict gluten-free diet.

Gluten is spread out all throughout our food system. Its not easy to avoid. It takes an active effort, Kalami explained. It is found in grains such as wheat, barley, and rye, and sometimes oats. So, anyone who has celiac disease has to make a really big dietary change when theyre diagnosed in order to control their celiac disease.

What Does It Mean To Be Certified Gluten Free

According to the FDA, products labeled Certified Gluten Free must contain less than 20 parts per million of gluten. For brands to be labeled as such, they must undergo testing every year in accordance with the Gluten-Free Certification Organization and other organizations. This process can be lengthy and expensive, which means not all gluten-free products will carry the label if their producers cannot afford the certification.

There are three main organizations who offer certification for gluten-free foods, including The Gluten Intolerance Groups Gluten-Free Certification Organization , the Celiac Support Association , and the Allergen Control Group. Happy Celiac Disease Awareness Month! To celebrate, lets talk about how to eat gluten-free and healthy.

Going gluten-free can be a big turning point to greater awareness and healthier eating. All of a sudden, people need to start reading labels, and many begin to wonder why there are all of these ingredients they cant pronounce and why high fructose corn syrup seems to be in everything. Or maybe after years of eating anything and staying slim, the pounds have started creeping upward, or blood pressure, blood sugar or cholesterol numbers are moving in the wrong direction.

Are You Getting the Nutrients You Need?

Nutrition is important for everyone, but particularly for people who have food restrictions. While a gluten-free diet is absolutely necessary for everyone with celiac disease, theres an abundance of highly processed, sugary foods out in the gluten-free aisle often even more than conventional foods.

This is not inevitable! The good news is that that many healthy foods are naturally gluten-free foods such as fruits, vegetables, beans, many whole grains, nuts, seeds and plain fish and poultry.

Suggestions to Make Your Diet Healthier

Go for healthy fats. Increase the amount you eat of fatty fish such as salmon, trout, flounder, sole, rockfish and more.

Calcium is key! This can be from Greek yogurt, cheese or milk, or if you avoid dairy, choose sardines, collards or turnip greens, beans, nuts, etc.

Limit sugar and high fructose corn syrup.

Why Spread Celiac Awareness

The reality of living gluten free for medical reasons isnt sensational, and therefore isnt typically covered by the mainstream media. In fact, there is little that could be considered glamorous about actually living without gluten for the rest of your life.

But that is what Celiac Awareness is really about: spreading the word that gluten might be at the root of what ails you sharing information on how to get tested explaining to others how to safely go gluten free for better health and correcting the untruths that persist about those of us living gluten free.

For us, May is a time when it may be most relevant to have the real life conversations about how difficult it can be to avoid gluten in a society whose diet is built upon it, but this topic is fair game any time.

This conversation needs to happen because we need to correct the misperceptions about what its like to live without gluten and why we might be doing it.

And we need to honestly discuss what others say to and about us because of our diet. Its only through education that we can help others and change minds.

But rather than dwell on these unfortunate and too-regular occurrences, I urge you to treat these interactions as opportunities. If you impart even one fact to every well-meaning friend or uninformed waitress about the severity of the gluten effect on some of us, think how much awareness you could spread.

Let me explain by way of example.
